Seductively Delicious Brownies

People are not going to listen to you (or believe you) when you tell them these were made with black beans, olive oil and balsamic vinegar because they’ll be too busy moaning loudly about the delicious texture and chocolatey-flavour of these brownies.

 

Ingredients:

1 can (15 oz) organic black beans, rinsed well and drained

2 free range eggs

1/2 cup of certified organic Cacao powder (could use cocoa powder instead)

1/4 cup cane sugar (or sugar of choice)

Dash of nutmeg and cinnamon

1/2 teaspoon organic extra virgin olive oil

1 tsp balsamic vinegar

1 tablespoon unsweetened almond milk

1 tsp baking soda

1 tsp baking powder

1/4 cup unsweetened coconut (save a sprinkle for topping)

1/4 cup of dark chocolate chips

Optional Add-Ins: Add in 1 tsp finely ground coffee for a mocha flavour. Toss in walnuts for some crunch. Add in chocolate chips into the batter for chunky chocolate style brownies.

 

Directions:

Preheat the oven to 350 degrees F.

Prepare a 8×8 pan (coat side with a little oil, or your favourite way to prevent the brownies from sticking).

Pull out your food processor and toss in the beans and eggs.

Pulse a few times until the beans are pureed (don’t want chunky skins in your brownies).

Next, add in the cacao powder, sugar, spices, almond milk, oil, vinegar, coconut, baking soda and powder.

Pulse about 13-15 times so the mixture is completely blended – don’t over blend. (Add in any optional add-ins here).

Pour the mixture into your prepared pan and sprinkle on coconut and chips.

Bake for about 25 minutes (or until a toothpick comes out clean).
